The chef at Skillet Street Food, a Seattle-based food truck pioneer, created innovative lunch menus based on American-inspired food prepared with classic technique and seasonal ingredients, then served them out of a vintage Airstream trailer. The lone food truck has since grown into three full-blown restaurants, a catering company and condiment powerhouse.
At Uproot, we relish (pun intended!) the opportunity to introduce customers to all things innovative, unique and deliciously versatile.
Our 2011 has the quintessential raspberry and blackberry notes of a classic cab, with the complexity of dark chocolate and tobacco.
In other words, a great main course, followed by rich dessert and a Cuban cigar. Doesn’t get much better than that.
So you could go for it with a juicy steak dinner. Or with dessert and artisan chocolates. But, what the hell, this cab is awesome with the whole meal, start to finish.
2011 started with a summer that didn’t get quite as hot as cabernet fruit likes, followed by some good downpours during harvest, which can lead to rot.
So we went to Howell Mountain in St. Helena, where two ideal blocks on a rocky hillside gave us the warm weather conditions and drainage we needed for great fruit.
We aged the wine in 65% new oak to give it just the right amount of smoky flavors. The result is an excellent vintage in spite of—or maybe even thanks to—the weather.
